Crab Meat Salad

Sea food lovers rejoice! This crab salad is incredibly simple and healthy to boot. We keep things spicy with bit of our Beaver Brand Cream Style Horseradish in the dressing.

Ingredients

Dressing

1 cup mayonnaise

2/3 cup Beaver Brand Gourmet Ketchup

1 teaspoons Worcestershire sauce

1.5 teaspoons Beaver Brand/Inglehoffer Cream Style Horseradish

2 teaspoons lemon juice, plus freshly grated lemon zest

1/4 cup finely minced chives or green onion

1/4 cup dill pickle, chopped

Sea salt to taste

Salad

1 head of lettuce (iceberg, romaine, butter or a mix of all three)

1.25 pounds fresh or canned crab meat

1 tablespoon capers

2 hard boiled eggs, cut in half

10 pitted Kalamata olives

1 large dill pickle, cut into quarters

1 large avocado, sliced

Fresh lemon wedges

Directions

1Combine all dressing ingredients and whisk together until emulsified

2Combine 1/2 cup of the dressing with the lettuce

3Divide lettuce among serving plates

4Arrange crab meat and remaining salad ingredients on top of the salad

5*Note: cooked, peeled and deveined shrimp can easily be substituted for the crab
