Home-Style Salad Nicoise

This traditionally French salad featuring Dijon Mustard is bright, fresh and perfect for spring or summer!

Ingredients

Dressing

2 tablespoons Beaver Brand/Inglehoffer Dijon Mustard

1 shallot, minced

1 garlic clove, minced

2 tablespoons capers with juice

1/4 cup apple cider vinegar

1/4 cup red wine vinegar

Juice from 1 fresh lemon

1/2 cup extra virgin olive oil

Sea salt and fresh ground pepper to taste

Salad

1/2 pound miniature baby white or red potatoes, skinned

1/4 pound string beans or Haricot Vert (French string beans that are longer/thinner)

8 Campari tomatoes cut into quarters

2 hard cooked eggs, shelled and cut into halves

1 can albacore tuna, drained

12 Nicoise olives, drained

Directions

1Combine dressing ingredients and whisk together until emulsified

2Cook the potatoes in boiling water until tender, then set aside to cool

3Cook the string beans in boiling water until tender, strain and cool in ice water to stop the cooking process. Once cooled, strain again and pat dry

4Cut the cooked potatoes in half and toss with 1/4 cup of dressing

5On a large plate arrange the potatoes, string beans, tomatoes and eggs. Place tuna (broken down into bite size chunks) and olives on top

6Pour the remaining dressing over the salad just before serving

7Season with salt and pepper to taste
