Pineapple/Mango Chicken Salad

This chicken salad recipe couldn't be easier - or more delicious! It features perhaps our most unique mustard flavor: Bread & Butter Pickle Mustard. Made summer time sweet with fresh pineapple or mango!

Ingredients

1 pound cooked roasted chicken mean, cut into chunks

2 peeled, diced hard boiled eggs

¼ medium sweet onion, cut into chunks

1 stalk celery, chopped

3 tablespoons mayonnaise

1 tablespoon Beaver Brand/Inglehoffer Bread & Butter Pickle Mustard

½ fresh lemon juice

1 tablespoon white wine vinegar

¼ teaspoon granulated garlic

Fine sea salt & pepper, to taste

Fresh or frozen pineapple or mango chunks

Directions

1Combine all ingredients except pineapple or mango in a food processor

2Pulse until ingredients are fully incorporated, and desired consistency is achieved

3Add diced pineapple or mango to the chicken salad mixture after processing
