Bacon Wrapped Stuffed Shrimp

So you like shrimp? Well imagine shrimp stuffed with prosciutto and green onion and wrapped in bacon. Now we're talkin'!

Ingredients

Stuffed Shrimp

8 16/20 size shrimp, peeled and deveined

2 tablespoons sherry

1 tablespoons Beaver Brand/Inglehoffer Stone Ground Mustard

2 stalks green onion, each cut into 4 equal pieces

1 ounce prosciutto, cut into 8 equal pieces

4 bacon slices, cut in half

Sauce

2 tablespoons Beaver Brand Chinese Hot Mustard OR Beaver Brand/Inglehoffer Honey Mustard

4 tablespoons soy sauce

Directions

1Preheat oven to 350 degrees

2Using a paring knife, butterfly the peeled, deveined shrimp

3Whisk together the sherry and mustard and marinate the shrimp for 10 minutes

4Place a piece of prosciutto and a piece of green onion between each piece of butterflied shrimp

5Wrap each stuffed shrimp with bacon and skewer with a toothpick

6Arrange skewers in a cast iron skillet

7Place the skillet into the oven and roast until the bacon begins to brown – about 5 minutes

8Flip the skewers and roast on the second side until the shrimp are opaque – 5 to 7 minutes

9Remove skewers and allow to drain on a paper towel.

10Combine your choice of mustard with the soy sauce and use as dipping sauce alongside the stuffed shrimp
