Enjoy this simple pasta salad full of pepperoni, salami, prosciutto, cucumbers, tomatoes and olives with a special dressing. Easy to make and delicious!
1/4 cup Balsamic Vinegar
1/4 cup Olive Oil
2 tbsp Beaver Brand or Inglehoffer Honey Mustard
2 tbsp Beaver Brand or Inglehoffer Dijon Mustard
Juice from 1 Lemon
1 tsp Granulated Garlic
1/2 tsp Dried Oregano
1/2 tsp Dried Basil
Sea Salt + Ground Pepper to Taste
1/2 lb Penne Pasta
1/4 lb Diced Italian Salami
1/4 lb Sliced Prosciutto (cut into matchsticks)
1/4 lb Diced Pepperoni
1/4 lb Fresh Mozzarella Balls (Ovolini)
10 Small Grape Tomatoes
1 Peeled & Diced English Cucumber
10 Drained Kalamata Olives
2 tbsp Drained Capers (including juice)
10 Drained Marinated Mushrooms
1Combine the dressing ingredients in a blender and process on low speed.
2Cook pasta al dente. Drain, rinse with cold water & cool to room temperature.
3In a stainless steel bowl, combine the remaining ingredients with the cooked pasta.
4Pour the dressing over the mixture and season with salt and pepper to taste. Mix thoroughly.
5Refrigerate for 1 hour before serving.
