Cranberry Mustard Chicken Breast Salad

Tired of dry, boring chicken? This delicious salad recipe features seared chicken breasts cooked in chicken stock, orange juice and Beaver Brand Cranberry Mustard - sure to be bursting with flavor!


2 boneless, skinless chicken breasts

1 teaspoon granulated garlic

Sea salt and ground pepper to taste

2 tablespoons extra virgin olive oil

½ cup unseasoned chicken stock

½ cup orange juice

2 tablespoons Beaver Brand Cranberry Mustard

1 tablespoons freshly grated orange peel

Lettuce of your choosing

Vinaigrette dressing of your choosing


11 hour before cooking, season the chicken with garlic, salt, and pepper

2Add the olive oil to a non-stick skillet on medium heat and sear both sides of the seasoned chicken breasts

3Add the chicken stock, orange juice, and mustard to the skillet

4Cover and continue to cook on medium high heat until chicken juices run clear – approximately 7 minutes

5Uncover the skillet rest chicken on a cutting board for 5 minutes

6While the chicken rests, combine the lettuce mix with vinaigrette dressing and separate on to plates

7Slice the chicken into strips and place the chicken on top of dressed lettuce

8Pour the remaining pan juices over the chicken and top with additional orange peel if desired
