Horseradish Garlic Mashed Potatoes

Here is a quick and easy recipe for Horseradish Garlic Mashed Potatoes that can be made at the last minute. Do not peel off the skin – its good healthy fiber. Cooking the potatoes in the microwave preserves the flavor rather than having it go into the water when you boil the potatoes.

1Make a slit in each Potato down the middle. Cook the Potatoes in a microwave on high for 3 minutes on one side and turn over to cook an additional 3 minutes on the other. Pinch the largest Potato & it should yield easily and be soft. If not, continue to cook the Potatoes for an additional minute or two. The length of time depends on the strength of your microwave & the size of the potato.
2In a large saucepan, heat the Butter, Buttermilk, & Cream, until just boiling.
3Add the potatoes and mash with a potato masher.
4With a wooden or stainless steel cooking spoon, stir the Potatoes to incorporate the liquid with the Potatoes.
5Add the Sour Cream, Horseradish, Garlic, and Salt & Pepper to taste and stir again to thoroughly incorporate the seasonings. Or you can use your favorite mashed potato recipe & add Beaver Brand Cream Horseradish.
