Salmon with Scotch Whiskey Sauce

4 Filets Salmon

Fine Sea Salt & Fresh Ground Pepper to taste

2 Tbs. Brown Sugar

2 Tbs. BeaverBrand Sweet Hot Mustard

Olive oil to coat the fish

Freshly squeezed juice from fresh lemon

2 oz. Scotch Whiskey

¼ cup butter

1 Tbs. Olive Oil

1 Tbs. capers with caper juice

2 Tbs. Lemon Zest


1Mix the salt, pepper, sugar and mustard to form a paste and brush on the salmon then brush with olive oil.

2Oil the grates for gas or charcoal grill and heat to 350 degrees.

3Place salmon on the grill, cover and cook to the desired doneness.

4Combine the lemon juice, whiskey, butter, olive oil, caper juice, and lemon zest in a sauce pan & heat until the butter melts.

5Take the salmon off the grill and pour the sauce over the salmon
